Tangy Rocket Salad
Ingredients
- 120g Rocket leaves
- 1 Pear
- 1 Yellow Nectarine
- Small Handful of Walnuts
- 1/2 Red Onion
- Green Olives (can be marinated)
- Fetta Cheese or Goats Cheese
- Juice from 1 Lemon
- 2 Tablespoons of Seeded Mustard
- Olive Oil
- 2 Tablespoons of Mayonnaise
- Salt
Method
- Add rocket leaves into a large bowl
- Thinly slice pear, nectarine and red onion and add into bowl
- Add olives and walnuts
- Crumble fetta or goat's cheese on top
- In a small mixing bowl, combine lemon juice, seeded mustard, mayonnaise, olive oil and salt.
- Mix well until combined and toss through salad
- Serve with any protein or as a side salad
