Bircher Muesli Breakfast Bites
Ingredients
- 100g rolled oats
- 30g cashews
- 35g dried apricots
- 10g shredded coconut
- 60ml apple juice
Method
- Chop up the apricots into small pieces
- Add all the ingredients together in a bowl and set in the fridge for 40 mins
- Add the ingredients into a blender, and blend for 10 seconds
- The ingredients will seem dry, however its firm enough to mix into a ball as it forms a dough like texture when squashed together
- Roll into 14 even balls and refrigerate before serving
